Crepes
Ingredients:
- 2-1/4 cups/ 560ml milk
- 4 eggs, large
- 1/2 tsp salt
- 1/4 cup/ 60g sugar
- 1/4 cup/ 60g butter, melted
- 2 cups/ 295g all-purpose flour
- 2 tbsp. butter, softened
Yield:
6 cups/ 1.5L batter -16 crepes or 32 small crepes
Method:
Place all ingredients except flour and softened butter in Vita-Prep container. Secure lid. Set speed controls to Variable, #3. Blend for 5 seconds. Add flour. Continuing on Variable, #3, quick pulse for 5-10 seconds until combined. Let batter rest for at least 1/2 hour or overnight. When making individual crepes, brush pan with softened butter. Use 2 oz./ 60ml of batter per crepe or 1 oz./ 30ml per small crepe.
Suggestions:
For sweet crepes, sautéed apples or fresh fruit filling topped with confectioner's sugar or farmer's cheese filling with fruit coulis.
For savory crepes, cooked chicken, artichoke hearts or asparagus filleng topped with béarnaise sauce or sautéed vegetables or goat cheese filling tipped with spicy tomato or red pepper coulis. |
